I’m always game for an easy, healthy breakfast. Particularly one that can be prepped ahead of time and doesn’t require heating up. Even better? A breakfast dish that doubles as a great party app.

Recipe below!
You’ll need:
12 eggs
2 avocados
2 tablespoons lime juice
Salt, to taste
Pepper, to taste
1 tomato, diced
½ cup red onion, diced
2 tablespoons cilantro
1 tablespoon garlic, minced
1 tablespoon jalapeño, minced
Then:
Boil the eggs
Remove the shells
Cut each egg in half
Remove the yolks and place in a bowl
Set the cooked whites aside on a serving tray
Add all the remaining ingredients to the bowl with the yolks and mash to make guacamole
Spoon the guacamole mixture into the bowls of the cooked egg whites
